Diggerg
Having my first go at both brining and wings. Brine is 1ltr water with 100g salt 100g soft brown sugar 1/2 onion sliced 1tbsp cider vinegar 1tsp fennel seeds 1tsp mustard seeds. Boil then cool. Going to brine for 2 hrs then smoke at 325° till done. Using lemon pepper as a rub.
Diggerg
Managed to get a couple of after shots. These were delicious. Even the wife who is contemplating become veggie said how great and juicy they were.

To be honest much I wouldn't know as it's my first time doing both brining and wings. Let's just say I would be more then happy to brine wings again if they continue to turn out this good.
Raptor72
I definitely think some salt or brining helps
