  1. I did ribs on the offset yesterday if anyone follows my instagram @colindavies39 there are a couple of vids about these. They were pretty special. All cooked on the offset, even the yorkys ๐Ÿ‘

    Smoked ham

    Smoked ham, with honey and orange glaze. Cooked over orange wood from smokeyolivewood ๐Ÿ‘ to an internal temp of 71ยฐc Served up this roast tattys and cauliflower cheese
  6. Knocked this together a couple of weekends ago.
  7. Ill be fine , did sausages in the rain and satyed well dry ๐Ÿ‘๐Ÿ˜‚๐Ÿคฃ๐Ÿ˜‚

So salted/brined the flat brisket for 5 days , rinsed for a couple of hours i them applied home made pastrami rub , placed on the offset at 225 -> 275ยฐF used cask whiskey barrel for the smoke and brought the temps slowly over 5 hours up to 204ยฐf then wrapped in 2 towels and dropped it into my yeti cooler To slowly cool. I collected the drippings for the gravy Roasted a sriracha cabbage , cored the cabbage and filled it with half a stick of butter, sriracha a couple of dabs of Worcestershire sauce the place the core on and wrap in foil. Par boiled the spuds while waiting for the beef to cool placed a tray of oil and got the oil up to smoking hot , dump in the spuds and cover them with the hot oil and shut the lid and leave alone for 50mins.

Working well, chicken kebabs done and it was hammering down, its now muggy n sticky, just bring ing temps up, then corned beef brisket , going on ๐Ÿ‘ pics up tomorrow๐Ÿ‘ cabbage done with sriracha and worcestershire sauce and roasted spuds mmmmmmm gunna be late night but lots of resting wrapped in a cool box.
  10. Didnt do toooo bad, bought a 138ltr chest freezer, moved a shelf, and 139.99 later im a happy bunny ๐Ÿ‘ just peeved that it happend , it like it was nearly new ,at 15 years old ๐Ÿคฃ๐Ÿ˜‚๐Ÿคฃ
  11. Weather proofed mine bud we have just had a hell of a downpour, and its all dry๐Ÿ‘ Just fired it up , chicken kebabs tonight to warm it up then over night brisket.

So we did our monthly meat shopping yesterday, brisket (for this weekends corned beef) 2 trays of chicken breast , mince (lamb beef and pork) chicken quarters 2 trays of 15, pork butt,full belly of pork inc ribs 4 racks of baby backs all in all about ยฃ250 of food...... And the inevitable happens the dam 15year old freezer fails. So im now filling parents ( dont think they have seen this much food since i was a kid and im 50 ) freezer and neighbors freezer as i can get a new one till this arvo and itll need 24hours to be cold enough to fill it. What a poo Friday, didnt need this when i got up๐Ÿ‘๐Ÿ˜ญ then i have had to make sure of the size as its built into the cupboard under the stairs.
  13. The thing that jumps out at me is no fat, no marbling a very lean cut the sort of thing ya going to get from a super market. Go to a good butchers and talk to them, im kind of lucky i have 2 or 3 local butchers that cater to bbq and smokers, they also bbq and smoke themselfs. They will show you the difference, morrisons want ยฃ7.50 kilo for brisket, my butchers are charging similar, and i get their knowlagde๐Ÿ‘๐Ÿ‘ Win๐Ÿ‘

  21. Sorry man, i couldn't respond, due to new at this myself, sont know what smoker you are using. I was using a cheapy aldi with good mods and id start to stall, id clear my ash and top up with fuel, stopping the stall. Heat drop or a stall can only be caused by a lack of fuel or oxygen feeding the fuel? I binned the cheapy and splerged on something a lot more exotic that holds the heat and burns longer because of thermal dynamics and convection๐Ÿ‘ Whats ya rig? Colin
