  4. I have done a few chicken rotisserie's and balancing is certainly the hardest part. My usual routine is to get the bbq setup and ready to go but I balance the chicken before lighting. I also bank the coals to one side (on the same side as the chicken rotates upwards) so then most of the drippings can land in a driptray. Then I let it do 10 or so spins to make sure its balanced ok and not slipping round the spit bar. I ended up purchasing a couple of counter weights aswell, they dont fully solve the trickyness but they make it more forgiving. Hopefully this may help in future. Main thing is it turned out delicious though😁😜

  6. Yeah I managed to get the chilli con carne cooked and some cornbread to go with it....and I managed to dodge the rain😜

  8. Has anyone got any bbq plans for the weekend or next weekend? Weather is looking not too bad (overcast and some wind) so Im planning on getting a chilli con carne done while I tidy up the garden this Saturday or Sunday. Weekend after is looking more promising though...pulled pork or ribs might be the goto cook for me.

  11. Glad to see you started the bbq year with a great start, I'm hoping to get my first cook of the year in this weekend😁 Hopefully this year I will be able to sort out some shelter for the bbq. My aim for this year is to get more low n slow cooks in, last year was mostly roasting, stewing and hot and fast cooks.

  14. I would recommend using ones that are strong and are able to transport food safely....that way you can send me some of that brisket once its done!😋😜👍 Sous vide is something I have not tried sorry. Would be good to see some photo's of the process if thats ok?

If heavy constant rain starts mid cook then you need to open vents slightly to counter it being cooled down and try to close them back about 20 mins before the rain stops...which is hard to predict. Light showers and sunny/cloudy dont affect it though. I highly recommend the rotisserie for christmas, I have done turkey on it the last 3 years and its super juicy and slightly smokey. It also has the added bonus of leaving the kitchen oven free for other food👍
  17. Sounds good, I have a local butchers which is great for all the common cuts, however he does struggle to get some of the rare cuts/joints. Usually I would order them but theres no telling when he gets them in which makes it hard to plan cooks. I will check out waitrose next time im near👍

  21. Cheers!👍 It was sunny when I lit the lumpwood and then 20 mins later it started, but once its lit then your committed haha. There is another post in the homemade section regarding the table👍

    I have never made pastrami before however I seem to remember (i think??) @pittmab doing one earlier in the year...or towards the end of last year🤔

We decided this morning that we fancied a steak for tea....but the hob aint working at the moment due to a gas leak coming from it (its capped off so dont worry👍) and it was forecast light rain on and off today. I said 'sod it, Im having one!'😜 i managed to get it lit just before it started raining again. It got quite heavy just as I was putting the steak in. Then it stopped just as it was ready....now its raining none stop so a lucky cook🍻 Anyone else throw caution to the wind once in a while with the bad weather?
