    Hi people

    Just a quick question please, Ice I have seen some USA videos where the keep the chimney wide open and control the cooking temp by opening and closing the smoke box door/ door vents. Is this what you would suggest ? Thanks in advance. Mike
  2. Thanks to all, for their warm welcome Tried to pin my location on the map but wouldn’t drop a pin for some reason. Might take me some time to work out how the web site works. I got the smoker built and my only comment would be why so many ceramic coated grill bars and where do they all go ? Still, I think I have worked it out. I have bought a chimney starter, ( don’t know why I have never got one of these before) and a good pair of heat resistant gloves. I think I might need to buy an accurate thermometer as, from my research, the gauge fitted to the kit out of the box is poor. Some US videos talk about seasoning the inside of the unit as I have in the past with a steel wok which I might have a go at. Before modifying the seal I might just see how much It leaks smoke. I am not expecting £500+ performance from a £160 unit and so I expect some leakage is inevitable and at the end of the day this is intended to be fun so I don’t want to get too serious about it all. I will probably buy some wood chips to start with and soak them overnight before smoking them in a foil container with holes in the foil lid although I hope to get some cherry wood or apple wood locally. I am looking forward to exploring this site though because personal experience of others is invaluable and I am hoping to find some good recipes. I found the site by just clicking on web sites and this one came up. Once again thanks to all who replied to my original post. Thanks Mike
  3. Hi everybody and thanks for adding me to the forum. Semi-retired taxi driver. Just bought a Landmann Kentucky smoker, still in the box and planning to assemble it today, ( in the shade, lol). I am a complete novice and am looking for any hints, tips, advice to point me in the right direction. Thanks in advance Mike
