    After 2 consecutive weekends with parties for 8 friends,  we feel that this coming weekend is going to be just for us.  I'm going to get into smoking some cheese,  we now have all we need to start re-making sausages.
    Hopefully, the weather looks like it will hold out,  finger crossed, as I am trying to erect the new shed that the Brinkman is going to take pride of place.
    We have a pork shoulder ready for the sausage making,  another belly for the curing,  this is going to be a wonderful weekend,  except the wife wants to go through all of our 3 tall freezers.   
     
    Sat morning.
    I was up at 0400 as is my whim....after a couple of cuppas I set to sorting out the first of the 6'  freezers we own.    I emptied the freezer into a fridge temp down to 1.7c  it's an amazing little fridge to go that low.
    That should hold everything for the time it takes to defrost the smegging thing.  At the moment I've placed a small blower on top of a box to speed things up....just having another cuppa and will have to check it all ok.
    I've also partly filled a plastic soft drinks bottle to freeze, I'm putting that in the bowl with what ice cubes we have for the smoker later on.

    Well that's the first bugger done..    and I've finished up with 2 large bags of ice,  that dropped off the shelves,  waste not want not the saying goes.  I think it's time to get the Brinkman and have a go at this large block of mature chedder....back later.

    There's good news and bad news....the good news is the new shed is almost done.  I must admit I didn't expect to get that far,...I would have been  happy just to get the sides up, no no the roof is on as well..jobs a good un.
    The bad news I never got to smoke the cheese,  it's ok thou as the shed is 95% done I'm getting the Brinkman on asap tomorrow morning.
    While the cheese is sat in the B-man I can tittivate the shed I need to sort the lock as a number of bbq kit is being stacked in there over the winter.
    Ice Ice Lady sorted the 2nd freezer and also found space in the kitchen for our new bacon slicer. so all in all a very happy day...just one more freezer to sort then that's it for this year.

    Where will it all end??? we started off back in 2016 buying a Brinkman smoker grill, used it mainly as a bbq.  We wanted to try smoking but never got around to it that year.
    2017 went buy in a flash, we had a couple of bbqs,  but then this year we dragged the grill out of the shed when it stopped raining, I remember that was around April.
    After joining the Woodsmokeforum.uk,  BBQing as taken off big time for us both...so we had the Brinkman but then there's this offset just at the right price. The Landmann Kentucky joined the Brinkman, back in July we attended the Woodsmoke 18 to find all sorts of BBQs, Webbers, Tepros, home made 50-gallon barrels etc etc.
    Rosemary fell in love with a cute little pot belly stove by Tepro,  Smoking Monkey had it on with a chili cooking......think it was...I remember I never got to taste it, I'll catch it next time around.
    Back home on the Sunday, we settled down so I put out a search on these little stoves.  I found them on lots of sites around the £120 mark, I tried Amazon, much the same so I popped over to the Bay.
    There it was, sat in its box, a guy had one for sale, brand new never been used asking £70 or offer....so I did for £50...he asked I answered.  He came back asking £60, I thought that's fair, meet in the middle, I paid him and it arrived a couple of days later.
    Now we had 3 bits of kit, this is getting daft, I can't remember where we came across the Jumbuck rotisserie??? I honestly can't remember if it was on a thread on the forum or wherever,  but it did look like a brilliant bit of kit and Homebase were selling them for £67...rrp was over £100...now wouldn't that be just great sat on the patio with a nice leg of lamb or pork, we just had to get one.
    The Jumbuck joined the stable of bbq'ing grills, stove, whatever, where was this going to end??  who knows??  I returned home from work one-day last week find an anniversary prezzie from my wife of a Webber 57cm.  Homebase again...(I'm going to get them bas****s for this)  the rrp of a Webber 57cm is in the  £260/£290 price range,  the shop with no name is selling them for £170/£180.
    It is a great looking bit of kit thou,  all I have to do is put it together....so that now makes 4, there'll soon be no room left on our small patio at this rate.    ?

    What can I say about the event??? it was a brilliant time for Rosie & myself.  To start off with, this was the first time either of us had been to anything like it 
    We were like the proverbial newbies in every sense of the word, but everyone was so cool and kind, giving us tips and showing us how to do stuff. 
    After a wet Friday start setting up the area where we would be working, read cooking, on the Saturday we settled down to "chewing the fat " with a load of new friends.  
    Tomorrow was to be our big maiden voyage on the SS Brinkman...more to follow with photos soon.

    Yipee... I've got to get on & finish the mods on the Brinkman today.  It has to be all done & ready for this Saturday at the Billing Smoker18. ?......more later on with a photo or two.
    Ok the Brinkman is now starting to look like it may work....fingers crossed.

    Like a lot of folks we've been having BBQ's forever,  and I mean years.  Like lots of folks, our BBQ's have been burgers, sausages, chicken wings etc. 
    A few years earlier while staying with friends in France we learnt to do a "beer can chicken",  this opened our eyes,  they also did hot & cold smoking,  we got to talking and thought maybe we can do the same.
    In 2016 we went out and ordered a Brinkman Smoker,   because of health problems we didn't get to use it.  That all changed at the start of this year,  out of the shed it came, dusted it off and fired her up. While searching for info for recipes and new ideas I came across this forum,  so here we go, looking forward to Billing next weekend and learning from the experts..
