  1. Hi all, Been away for a bit due to moving house/not having internet. So will have to catch back up on the forum. Before that I need some help. I've got some corned beef that was due on the 22nd, turns out that when my wife is now due (she is being induced). Because I'll be too busy to smoke on the 22nd (and a few days after) what's my best plan of action? Freeze at the end of curing, or will simply fridging suffice?

  3. Been tasked by the in-laws for the Christmas ham. The problem I've got is traditional Christmas ham has the fairly sweet glaze, I've done it previously and they've asked to tone down the sweetness.. Anyone have any suggestions for a good ham recipe?
  4. Not been able to buy shop versions is always a danger. Already happened with bread and coffee. I was going to do an immersion brine, I'm fairly happy with cure calculations.
  5. Hello, I've only done a handful of smokes and still very much learning. Planing on making my first bacon this week (my wife refuses to acknowledge the existence of unsmoked bacon). Currently based in the West Midlands, but not for much longer (moving back to Northants area).
