  4. Do you have room for a small gazebo? Before I built my smoking shelter I used one - it provided shelter to get up to temp and keep the rain off during the cook.

Heads up for anyone looking for a rib rack - I ordered this from Amazon: https://www.amazon.co.uk/gp/product/B095HH517V/ref=ppx_yo_dt_b_asin_title_o01_s00?ie=UTF8&psc=1 I haven't cooked with it yet but it just fits on top of the grill in my 2022 AK, and the lid closes fine. Seems well made, and is a fraction of the cost of the Weber one - works out at £6.99 when you apply the 30% off voucher. Hope this helps
  9. Tonight's cook - 2.25kg beef rib joint. Simple olive oil, garlic, salt, pepper marinade. Cooked with a chunk of oak. Kept the temp between 180 and 190c for around 1 hour 30 until internal temp hit 60 in coldest part of the meat, then rested for 30 mins under foil. Tastes amazing!

  11. Introducing my BBQ shack. I built the table/prep station last year using a 4x2.5 foot granite worktop I picked up second hand on ebay, and some spare joists and decking boards. I was using with a gazebo for pizza and BBQ previously but wanted something a bit more sturdy, so built the shelter over it and used feather edge to put sides on the table to hide the gas bottles etc. Only used once so far, but looking forward to cooking whatever the weather!
