  1. Citra is one of the most popular hop varieties in the world and it is continuing to gain popularity in IPA's, pale ales, and many other types of ales. Citra hops are a dual-purpose hop that have many of the properties of a strong aroma variety and a strong bittering variety as well. The strong aroma properties come from the oils in the hop, giving it citrus, tangy, and fruity flavors. The strong bittering properties come from the alpha acids and beta acids in the hops. This makes it a great all-purpose hop for bittering and aroma. Because of this dual purpose, you rarely see Citra used at high rates in the brewing process.
  2. A cold smoker is used for food that needs to be smoked for an extended period of time, but doesn't require the cooking process of a barbecue. To build such a cold smoker, you need a 55-gallon drum, an electric drill and a saw, several coils of metal grill or stove grate, and metal ductwork or metal pipe. The 55-gallon drum needs to be cut in half side to side, and the top and bottom portions of the drum need to be sealed with the metal grill or stove grate. The metal pipe or ductwork needs to be sized to fit snugly in the center of the drum, and it should be long enough to extend over the top of the drum. When the pipe or ductwork is in place, it needs to be curved downward so that food can fit on top of it. The pipe or ductwork needs to be sealed with metal duct sealer. Duct sealer can be found at most hardware stores.
  3. I have been camping with cast iron cookware for over 40 years. I have always found that cast iron is the best for cooking over open fire coals. Any cast iron pots and pan will work, even Griswold, Wagner and Lodge. For frying, my favorite is bacon and eggs in a 10" Griswold skillet. For Dutch oven cooking, I use a Skillet or a Griswold large dutch oven. I recommend that you use a small Dutch oven and Dutch ovens that is seasoned well because they will work much better. For Campfire cooking, it is important to use at least a 10" Griswold skillet so that you can fry an egg and cook bacon in it.
