  1. I must decide what to do. Additionally, I'm using garlic, onions, and mushrooms. maybe a little thyme. assembling steak sandwiches with provolone cheese and mushrooms. Would you use dark beer or red wine for cooking? youtube thumbnail grabber
  2. Was researching here but still not sure which would be better for high altitude smoking. I used to smoke with charcoal and wood chips at sea level. Loved the flavor. After moving to 9,000 ft and repeated failures I realized there just wasn't enough oxygen to get a good charcoal heat. I am currently living at sea level again but looking to move back to the mountains (9,000 ft).
