  1. Just a heads up folks, I bought the Inkbird BBQ controller for my Aldi Kamado and it seems to be work great. There is a cracking offer on ebay at the moment which I've detailed here: I don't have any affiliation to the offer whatsoever.
  2. Just a heads up for anyone interested: The TLDR is that with the current multibuy offer on ebay, you can buy 3 Inkbird BBQ controllers for £119.99 each (£135 if 2 are bought). They are normally north of £200. I have just bought one from amazon for £180 with discount code and it seems a kissy bit of kit - comes in a nice box and fits the Aldi Kamado. I'll take some photos if you want. I'm not affiliated with the ebay seller or the company, I just know a cracking deal when I see it - if 3 of you can bang your heads together you'll get a bargain.   5. It came today - I've attached some pictures. The things to note are: The grate holder, for want of a better word, has an inch or more expansion room at the firebox level so there shouldn't be a problem there. It's much tighter towards the top of the Kamado so I'll be keeping an eye on how much that expands. The deflectors(two half moons) are twice the thickness of the original. The grates go on a little to snugly for the holder meaning you have to 'stuff' it in a little - not an issue when setting up but might be a PIA to adjust if it was red hot. It's not crazy out, just not perfect. The thickness of the metal is the same or comparable to the original grate the Aldi Kamado comes with but isn't as heavy. It IS nice to have a proper pan tray kept of the deflector.
  6. I have just ordered the 20" divide and conquer from YNNI - they are back in stock after months of being out of stock. People here have already said the 20" only fits the 21 Aldi Kamado(which is what I have) - I'll report back once I get it. I'm an expert on nowt though so I'll only be letting you know about the fitment etc. It's due in the next couple of days so I'll take photos. I also have the proq basket so I'll let you know if it plays nicely.
  7. I think I'm going for a simple salt, pepper and garlic powder rub - bound with american mustard. Wood smoke I think will be just oak on this. I'm going with 3-2-1 method again at 275C 👍
  8. I've just pulled my 3 ribs out of the freezer. I'm going to take them off the grill when the probe goes in like butter or hell freezes over, whichever comes first. I don't care what time it is - they'll either turn to a carbon rock or they'll be butter-like. Wish me luck. 😀
  9. Wow they are dinosaur ribs, they look great! Did they come out tender though and how were your temps?
  10. Perhaps you could use the meat itself as a grill probe holder and poke the probe 'through' 😀
  11. I'm suprised you don't have room for the probes. Are you using a delector plate becuase if not then I don't think you want a grill probe as it would be exposed to the flame and you might damage it. Perhaps you could angle the 'food' probe vertically so it doesn't take any room?

I'd definitley use a drip tray covered with foil(no water) to keep drippings off the heat deflector - mine broke and definitely don't pull the shortribs until your probe goes through them with no resistance - my probe read 205f but mine definitely werent ready for pulling(or eating) They the only tips I have as mine weren't very good 😀
  13. Oh wow, that's my next one then - shoulder of lamb with lashings of mint! Am I crazy to think the drip pan, with water in it, would make a good gravy? 🤔

  15. Nice one, I like the ingredients in the foil drip tray idea. I smoked a spatchcok yesterday and the flavour was superb but the chicken skin, if I'm being honest, was a little rubbery. It was 225-250 indirect. I'll bump the temp up next time 👍
