I have been smoking and grilling for longer than I care to mention, like game harvesting and processing. I have travelled a fair bit in the US, getting the oppourtunity toearn about how to smoke and 'cue in the US style, in the UK.
I began meat curing so that I could get salt beef like the stuff I had eaten in the US.
By profession a brewer, by obsession, a smoker!
